Does the difficultly in Minecraft affect the exploration gameplay?

i'm playing on easy at the moment and i hit these stone i can't break with an iron pickaxe, i was hoping to find lava but so far no luck, if you have an answer or ANY recommendations they would be greatly appreciated, thank you so much (:
