Asking professional chefs! I'm looking for sauce/gravy recipe when cooking pork loin roast in crock pot.?

I've heard chefs say that cooking a pork loin roast in apple juice with apples and raisins is good. I tried it & it is good. Recently I heard Chef Anthony Bourdain say that cooking it in pears with pear juice is even better. He's right, it is better. Now I would like to make a sauce or a gravy out of the broth made by the juice and fruit. I tried just today making pork loin roast with peaches and it's very good too. But there again I need a recipe for a sauce to make with these fruits. Got any ideas? Also what side dishes most enhance a pork loin roast. I recently served it with Asparagus and mashed potatoes and carrots cooked with er and honey. (I don't like adding a white veggie to a white meat but did it for my husband.) Thanks for the help.
